Recipe of the month


My favourite meal this month is Chana Makhani in a baked sweet potato


This recipe was so so so good! It was so creamy and sweet however savoury and satisfying all the while being healthy.


Vegan, Gluten Free and Nut Free


This recipe serves 2


Ingredients:

2 baked sweet potatoes

1 can of chickpeas, drained and washed

2 handfuls baby spinach, washed

2 handfuls cherry tomatoes, diced

3 stalks of spring onion, finely sliced

3 cloves of garlic, crushed

1 tbsp tomato sauce

150ml Coconut cream

1 tsp turmeric

1 tsp cumin

½ tsp chilli powder

½ tsp ginger powder

Salt and pepper to taste

Coriander and mango chutney to garnish


Method:

Bake sweet potatoes or microwave them (in a time pinch I microwave) as per googles trust instructions

In a fry pan add tomatoes, garlic, and spring onions and 3 tbsp water, sauté for 3 mins

Add chickpeas, tomato sauce and spices and sauté for 2 mins adding more water if required

Add coconut cream and spinach and cook on low heat for a further 2 mins

Serve in sweet potatoes with mango chutney and coriander
